Základní chemické parametry plodů několika odrůd černého rybízu

Abstract

Tato práce se zabývá chemickou analýzou šťávy z plodů šlechtěných odrůd černého rybízu (Ribes nigrum L.). V teoretické části je uvedena botanická charakteristika černého rybízu, včetně jeho rozšíření a místa výskytu. Dále je pojednáno o historii pěstování rybízu, šlechtění jednotlivých odrůd a chemické složení rybízu. V experimentální části byla provedena stanovení základních chemických parametrů (výtěžnost, obsah rozpustné sušiny, pH, titrační kyselost, formolové číslo a redukující cukry) ve šťávě z plodů čtyř šlechtěných odrůd černého rybízu.This thesis deals with the chemical analysis of the juice from fruits of cultivated varieties of blackcurrant (Ribes nigrum L.) The theoretical part is dedicated to botanical characteristic of black currant including the origin and the extension. There are also mentioned the history of cultivation currant and breeding of the varieties of black currant. Chemical composition of currant is also described in this part. In the experimental part some basic chemical parameters (yield of juice, soluble dry matter content, dry matter general content, pH, titratable acidity, formol number and reducing saccharides content) of four black currant cultivars were determined.
